Efecto de la incorporación de extracto de tamarindo (Tamarindus indica) con actividad antioxidante en la elaboración y funcionalidad de películas biodegradables proteína-almidón Public Deposited
Finally, films were subjected to texture analysis to evaluated their mechanical properties (strength strain (ở), % elongation (ε), the Young's modulus (E) and the relationship (ởłε). A significant difference between formulations (P≤0.05) was observed. It has been reported that low values of δ and E combined with high values of ε correspond to resistant and easy stretch films, which are considered as ideal for its resemblance to the mechanical behavior synthetic matrix films. Only films containing WPI and NPS in the 40:60 ratio, corresponding the N5 formulation (N51, N52 and N53) showed the above mechanical behavior, with the following results: δ (3.131±0.628, 3.933±0.114 and 3.922±0.157 N/m2 ), δ (42.632±0.482, 38.467±0.482 and 26.329±7.019%), E (0.346±0.034, 0.503±0.074 and 0.519±0.012 N/m2 ) and δłε (8.987±0.901, 7.921±1.102 and 7.564± 0.474). Tamarind waste products may generate a rich source of polyphenolics compounds with antioxidant activity, which can be incorporated into films matrices of WPI and NPS maintaining the antioxidant activity. Therefore, results indicate that the generated extract can be an alternative in the development of active packaging
